  • Eastern Coffee Roasters, a family-run business, holds its grand opening today at the restored Cheney Depot—a building saved by local volunteers—and guided tours with an open house are set for tomorrow from 2 p.m. to 6 p.m. with a ribbon cutting at 9:30 a.m.  The Spokesman-Review

BUSINESS NEWS

  • Downtown’s Wonder Building now hosts two local favorites—BLVD Coffee Co. in its third location and Soulful Soups in its second—serving coffee, gourmet soups, and food specials near Spokane Arena. Both eateries are open weekdays during business hours.  FOX 28 Spokane
  • Method Juice Cafe opened its third location at Spokane Airport Wednesday. The cafe now serves smoothies, acai bowls, rice bowls, sandwiches and breakfast options for early travelers.  FOX 28 Spokane

  • A new Longwoods International report finds rising gas prices are leading 41% of travelers to choose trips closer to home while registrations for Bloomsday and Hoopfest remain strong — helping boost local tourism and drive a $1.5 billion economic benefit, Visit Spokane said.  KHQ

EDUCATION NEWS

  • For 10 years, UW and Gonzaga have cooperated in a health partnership that expanded medical, dental, and health sciences education in Spokane - now housed in a modern shared facility. A visit lasting 2 weeks by French exchange students highlights Spokane's strong tradition in global learning.  Spokane Public Radio
  • Downtown Spokane hosted the State Business Leadership Conference where more than 2,500 high school students gathered at Davenport Grand this week to compete in business presentations, public speaking, and ethics tests. Winners in each category will advance to the national event in San Antonio in June.  KXLY

SPORTS NEWS

  • Carlos Jimenez went 2-for-2 with a homer and key hits to help the Everett AquaSox win 11-3 over the Spokane Indians at Funko Field Thursday. The Indians lost five straight games and will play again Friday at 7:05 p.m.  The Spokesman-Review
